"cut out" from painted brushes in shoppe?

Okay, I have a huge cart full of stuff I want, but before I buy the set of brushes that look like acrylic paint, I want to know how you "cut out" the letter/words for a beautiful title.

While I am here, I'd love to know how to get teh flourish brushes to be on top and below a ribbon for a partial wrapped view as pictured on teh preview pic. I have those brushes already--I figure I should be using some type of eraser, but I can't figure it out.

I looked at the preview on the Flourish Brushes and you should be able to just use your eraser brush, select the layer that you used the brush in and erase the portion that you don't want to show.

I'm not sure about your other question. . . what brush set are you referring to?
